Let’s Make Leaner Lumpia

Let me preface with this: I am not a professional chef. I truly just enjoy cooking and eating and if that includes rarely following recipes and a messy kitchen, then so be it.

Lumpia is one of my favorite Filipino dishes and it holds precious memories for me. I can recall being a child and watching my lola (grandma) make neat piles of identical rolls. Neighbors and friends raved about her lumpia and we still talk about it to this day. For my healthier version, I increased the nutrient value by using ground chicken and tofu to make two leaner lumpias.
